– 4 slices white bread or sour dough – 1/8 teaspoon black pepper or to taste – 2 tablespoons mayonnaise – 4 ounces cheddar cheese or American cheese – 2 tablespoons shredded cheddar optional
1. Set a small skillet on low heat to preheat. 2. Each slice of bread should have one side covered in mayonnaise. Place the mayonnaise-side down in the skillet. 3. Add slices of cheddar cheese, salt & pepper to taste, then the last piece of bread with the mayonnaise side facing up.
4. Grill for 4–5 minutes, or until browned. Grill the opposite side until golden after flipping. 5. Add the shredded cheddar immediately to the outside of the sandwich just before serving, and grill for an extra minute or two to make it crispy.
