Today at #BundtBakers we are showing off our fruit and nut inspired bundt cakes! For me, my cake had to be a Cherry and Sliced Almond Mini Bundt Cake! Cherries are my summertime obsession this year! I am loving them!! I also added a fun, tasty cherry sauce that is so easy to make, it’s ridiculous! You will want to make this!
Cherry and Sliced Almond Mini Bundt Cakes
1 1/2 cups pitted Fresh Cherries
2 cups Flour
1 tablespoon Baking Powder
3/4 cup Butter
1 1/2 cups Sugar
1 1/2 teaspoons Vanilla
1 cup Milk
5 Egg Whites
1/4 cup Sliced Almonds
Cherry Sauce (recipe below)
Preheat oven to 350 degrees. Grease and flour cake pans.
Pit the cherries and cut them in to quarters. Set aside.
Mix the flour and baking powder together in a bowl. Set aside. Beat the butter, sugar and vanilla together in a mixing bowl. Mix until fluffy.
Add milk and the dry ingredients alternatively to the batter beating each addition until combined.
In another mixing bowl, beat the egg whites until stiff peaks appear. Fold the whites into the batter carefully.
Add your chopped cherries and sliced almonds to the batter. Fill pans with batter. Cook for 15-20 minutes. Cool and take out of the pan. Make the Cherry Sauce.
Cherry Sauce 3/4 cup Sugar 2 teaspoons Cornstarch 1/3 cup Water 4 cups Fresh Cherries, pitted Pit the cherries. Add the sugar and cornstarch to a saucepan. Add the water and cherries. Bring to a boil and let boil until the sauce thickens. If it doesn’t thicken, add cornstarch, 1 teaspoon at a time. Once the sauce thickens, pour it through a strainer, so you only get the juice. Push the cherries against the strainer to release as much juice as you can. Refrigerate what you don’t need.
Drizzle the cherry sauce over your bundt cake. Sprinkle some almonds on the side.
