– 2 Boneless Skinless Chicken Breast – 4 tablespoons spinach cooked – 4 cooked parsleys fresh – 8 tablespoons butter room temperature – 1 teaspoon kosher salt – 1/2 teaspoon black pepper – 1 large egg beaten – 1 cup panko or breadcrumbs
1. Cut the parsley into small pieces, add the lemon zest, and mix the softened butter into the bowl. Combine thoroughly. 2. With caution not to cut through the whole chicken breast, cut a pocket in each one. Take two tablespoons of the garlic herb butter and stuff each pocket with it.
3. Mix the breadcrumbs, pepper, and salt in a small plate. Combine thoroughly. 4. In order to ensure that the breadcrumbs stick to the chicken, dip each filled chicken breast into the breadcrumb mixture and press firmly.
5. The air fryer should be preheated to 400°F (200°C). Put some frying spray in the air fryer basket. 6. Stock the air fryer basket with a single layer of chicken breasts. Mist cooking spray over the tops.
