– 2 filet mignon steaks – kosher salt – coarse ground black pepper – 1 tbsp peppercorns – 3 tbsp butter divided – 2 tbsp shallots minced – 1/2 cup beef broth – 1/3 cup brandy or cognac – 1/2 cup heavy cream
1. Apply salt and pepper to the steaks' whole surface. Turn the grill to medium-high heat and leave them on a pan on the counter. 2. Steaks should be cooked for four minutes on the grill.
3. For the peppercorn sauce, begin preparing. 4. Toss the steaks. Once the steaks reach an internal temperature of 127F, grill them for a further 3–4 minutes for medium-rare.
5. Once you have finished making the sauce, take them off the grill and allow them to rest on a pan that is loosely wrapped with foil. 6. Add enough of peppercorn sauce to the dish before serving.
