Stuffed Meatballs / #SundaySupper

This Stuffed Meatballs Appetizer comes together easily and is fun to eat with friends and family. We are talking about eating, sharing and enjoying the heck out of meatballs today for #SundaySupper!  The meatballs can be put together ahead of time by letting them simmer in a crock pot, and then just place the meatballs in the bread cups when it is party time!

 Stuffed Meatballs Appetizer

makes 2 dozen small meatballs
Sauce 
Extra Virgin Olive Oil
2 cloves  Fresh Garlic~chopped
28 ounce can San Marzano Tomatoes 

Meatballs
1 pound Angus Beef 80/20 Ground Chuck
1/4 cup chopped Sweet Yellow Onion
1/2 cup Italian Style Bread Crumbs
1 Egg
1/2 teaspoon Ground Pepper
1/4 cup Milk
3-4 ounces Fresh Mozzarella~cut in to tiny 1/2″ pieces

Bread Cups
1 11 ounce tube of French Bread
6 ounces grated Parmesan Cheese

Heat oil in sauce pan. Add garlic. Let cook for approx. 2 minutes, stirring when needed. Add tomatoes. If you use peeled tomatoes, chop tomatoes in to small pieces before adding. You can also chop the tomatoes in the pot with an immersion mixer. Simmer on low.

Add ground chuck, chopped onion, bread crumbs, egg, ground pepper, and milk to a bowl. Mix together. I wear food safe gloves and mix together with my hands. You could also use a spatula or spoon.

Use a 1 tablespoon scoop to make the meatballs. Scoop the meatball mix, and set it aside. It is not necessary to roll in to a ball at this time.

Place the mozzarella piece in to the middle of the ground chuck and form the meatball in to a small ball, covering the cheese.

Heat a small frying pan, and as you are forming the meatballs, place them in the pan to get brown. Roll meatballs around to brown the outside.

As the meatballs get brown, add them to the pot of sauce. Let them sit in the sauce and cook on the inside as they simmer.

Open the tube of bread. Start slicing in to 1/4″ pieces. Place each piece in to a mini cupcake pan sprayed with pan spray. Cook at 350 degrees for 9-10 minutes. Remove from oven, and immediately indent the bread pieces to form a bowl. Use something like the pestle shown, or the back side of a small cookie scoop. Let cool.

Place a meatball in each bread cup. Top with grated parmesan, and serve.
