– 3 ripe bananas, mashed – 1/3 cup melted butter – 1 teaspoon baking soda – Pinch of salt – 3/4 cup sugar (you can reduce the amount to 1/2 cup if you prefer less sweetness) – 1 large egg, beaten – 1 teaspoon vanilla extract – 1 1/2 cups all-purpose flour
1. Preheat the oven to 350°F (175°C). Grease a 9x5 inch loaf pan. 2. Mash the bananas in a large mixing bowl with a fork or potato masher until smooth. 3. Stir in the melted butter until combined.
4. Mix in the baking soda and salt. Stir in the sugar, beaten egg, and vanilla extract. 5. Add the flour and mix until just combined. Do not overmix. 6. Pour the batter into the prepared loaf pan.
7. Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean. 8. Cool the bread in the pan for about 10 minutes, then transfer it to a cooling rack to cool completely.
