– 1- Pound carrots 1 large or 2 medium bunches, – 1 tablespoon extra-virgin olive oil – 1 teaspoon honey or maple syrup – ½ teaspoon sea salt – Freshly ground black pepper – Chopped fresh parsley for Garnish
1. Melt butter in a large heavy-bottomed pan over high heat. 2. Add onions and cook, stirring frequently, until the bottom is glazed in pale brown fond, about 5 minutes. 3. Add 2 tablespoons of water and scrape up the fond.
4. Continue cooking, adding water and scraping every 2 minutes, until onions are deep brown, about 15 minutes. 5. Season with salt and remove from the pan quickly to prevent burning.
