– 2 lbs Jalapenos
1. Wash the jalapenos. 2. You can smoke them with stems, seeds, and membranes intact, but removing the stems is preferable. 3. Set your smoker to 220 degrees, using apple or pecan wood for enhanced flavor.
4. Place the jalapeños on the rack in a single layer with some space between each. 5. Close the lid and smoke for about 4 hours, checking every hour. 6. Smaller chipotle peppers may require a grilling tray.
7. When fully smoked, the peppers will be dry, black, and leathery. 8. Remove from the smoker and place on a platter.
