– 1 tbsp Lemon juice – 1 Package double-crust pie pastry, thawed – 1 tbsp Butter – 1/2 cup White sugar – 5 cups Peeled and sliced pears – 3 tbsp All-purpose flour – 1/4 tsp Salt – 1 tsp Ground cinnamon – 1 tsp Lemon zest
1. Preheat oven to 450°F (230°C) with a baking sheet on the bottom rack. 2. Line a 9-inch pie plate with one crust; set aside the second crust. 3. In a mixing bowl, combine sugar, flour, cinnamon, lemon zest, and salt.
4. Layer pear slices in the prepared crust, sprinkling each layer with the sugar mixture. 5. Dot with butter and sprinkle with lemon juice. 6. Moisten the rim of the bottom crust with water.
7. Cover the filling with the remaining pie crust, flute the edges to seal, trim excess pastry, and cut slits in the top crust for steam. 8. Bake at 450°F on the baking sheet for 10 minutes.
9. Reduce heat to 350°F; bake until crust is golden brown and filling is bubbly, 35 to 40 minutes. 10. Cool for several hours before serving.
