– 2 Large egg whites, beaten – 2 ¼ cups Melted butter, divided – 1 tsp Vanilla extract – ¼ tsp Salt – 1 tsp Ground cinnamon – ½ pint Sour cream – 2 ½ lb Ground walnuts – 7 cups All-purpose flour
1. Preheat your oven to 350°F (175°C) and prepare your baking trays with parchment paper. 2. In a small bowl, combine warm milk, yeast, and 1 teaspoon of sugar. 3. Allow it to sit for about 5 minutes until the yeast activates and forms a creamy foam.
4. In a large mixing bowl, blend 1 cup of sugar, 1 cup of melted butter, 3 eggs, and salt until well mixed. 5. Incorporate the sour cream. 6. Add the flour and the yeast mixture, mixing and kneading until a cohesive dough forms.
7. Divide the dough into 7 equal portions. 8. In another large bowl, combine the remaining 2 cups of sugar with 1 1/4 cups of melted butter, stirring until the sugar dissolves. 9. Mix in the walnuts until they are evenly coated, then add the cinnamon and vanilla.
10. Divide this filling into 7 equal parts. 11. Roll out each piece of dough into a rectangle about 1/4 inch thick. 12. Brush the tops with beaten egg whites.
13. Evenly spread the filling on each rectangle, leaving a small border around the edges. 14. Lightly brush the borders with egg whites, then roll each rectangle lengthwise like a jelly roll.
15. Place each roll, seam-side down, on the prepared baking trays and brush the tops with more egg whites. 16. Bake in the preheated oven for about 30 minutes or until they are lightly browned. 17. Allow them to cool completely before slicing and serving.
