The Freshman Cook: Linzer Buttercream Spring Cookies

I am really ready for spring! So, in the hopes of nudging things along, hoping that it might arrive earlier, rather than later, I made some Linzer Buttercream Cookies in spring colors! I used the daisy cutout for the center because that was the only cutout that was “spring like”. Then wouldn’t you know that I was at HomeGoods yesterday, and I saw a Linzer cutout set made just for spring! Oh well! I hope these cookies make you smile!
Linzer Buttercream Spring Cookies

2/3 cup finely ground Almonds

2 cups Flour

1/4 teaspoon ground Cinnamon

1 cup Butter, softened

2/3 cup Sugar

1 Egg

1/2 teaspoon Vanilla

1/2 cup solid vegetable Shortening

1/2 cup Butter

1 teaspoon Vanilla

4 cups sifted Confectioners’ Sugar

2 tablespoons Milk Colors for frosting Preheat oven to 350 degrees. Using a food processor, grind your almonds until fine. In a small bowl, combine almonds, flour and cinnamon. Set bowl aside. In your mixing bowl, cream together the butter and sugar.
Add the egg and vanilla and mix well.
Add the flour ingredients and mix together until combined.
Divide dough into 2 pieces, shape them into discs,  and wrap in plastic wrap. Refrigerate until firm, about 2 hours. You can leave overnight also. Roll out one disc of dough on a floured surface.  You may need to flour your rolling pin also. Line your baking sheets with parchment paper or a baking mat. Start cutting and place the cookies on your baking sheet. Remember to cut out an even number of fronts and solid backs. Bake for 9-10 minutes.
Cool completely.
In your mixing bowl, mix together your shortening and butter. Add vanilla and mix in. Add the confectioners’ sugar one cup at a time, mixing in between each addition. The frosting will seem dry after all the sugar is added. Add your milk. If you need more, add just a teaspoon at a time. You don’t want it too runny. Take some of the frosting and place it in a smaller reclosable bowl. Tint it the color you want. Do this will all the colors you will be using. Frost the bottoms of your cookies.
For the prettiest cookies, make sure the frosting is smooth in the center of the cookies. That is what will show through. Put the tops on and you have, Linzer Buttercream Spring Cookies. Now we are ready for spring!
