The Freshman Cook: Leprechaun Thumbprint Cookies

Thumbprint cookies are some of my favorite cookies. I love their versatility to fit in to any party or celebration. Plus, they are so tasty!! These Leprechaun Thumbprint Cookies are all dressed up for St. Patrick’s Day and ready to party!

Leprechaun Thumbprint Cookies

1 cup Butter

1 cup Powdered Sugar

1 cup Granulated Sugar

2 Eggs

1 cup Vegetable Oil

2 teaspoons Vanilla

1 tablespoon Lemon Juice

5 1/4 cup Flour

1 teaspoon Cream of Tartar

1 teaspoon Baking Soda

pinch of Salt

Mini Hershey Kisses

Green and Light Green Candy Melts

Gold Sugar Sprinkles

Preheat oven to 350 degrees

Preheat oven to 350 degrees.

Beat your butter on medium until it is fluffy.

Add both sugars and beat well.

Add your eggs, oil, vanilla and lemon juice.

Beat until blended.

In a separate bowl, mix together your flour,
cream of tartar, baking soda and salt.

Add the dry ingredients to the egg mix and beat until blended.

You want to shape your dough in to 1″ balls.

Take a small scoop and scoop the balls onto 

parchment  paper on a baking sheet.   Then pick up each scoop and round it into a small ball.
 If you are thinking of skipping this step~you can.

But the difference is seen in the above picture.

The baked cookies on the left were not rolled into the ball,

the ones on the right were. The ones on the left are not

 as pretty, but they might work for certain situations.

 It takes a little longer to form the balls, but the end result is worth it!

Bake your cookies for 9-11 minutes.

They will not brown, except for a little bit on the bottom.

Then use something to make a circle in the middle 

of the cookie, as soon as it is out of the oven.

I used a pestle this time, but I have also used, a spoon,

my thumb, and a rounded teaspoon.

Place two mini kisses on each cookie.

Drizzle the light green candy melt over the cookies.

Drizzle the dark green candy melt over the cookies.

Add the gold sprinkles.
