– 2 1/2 lbs. red potatoes 5 large, cut cubes just over 1/2-inch – 1/3 cup olive oil – 1 tsp salt then more to taste – 1 tsp freshly ground black pepper. – 3/4 tsp garlic powder – 3/4 tsp paprika – 1/2 tsp onion powder
1. Heat the oven up to 450 degrees. Apply nonstick cooking spray to an 18 by 13-inch baking sheet that has a rim. 2. Make a mound of potatoes in the middle of the baking sheet. Pour some olive oil over it.
3. Add onion powder, paprika, garlic powder, and salt & pepper to potatoes. Toss thoroughly to coat in oil and spices equally. 4. Evenly distribute the potatoes onto a single layer. Bake for 15 minutes in the center of a preheated oven.
5. Take out of the oven, toss, and bake for a further fifteen minutes or so, or until just tender. 6. Adjust oven rack to be about 5 inches away from broiler. –
7. Potatoes can be slightly browned in 2 to 3 minutes under the broiler (watch them carefully and don’t leave them alone; they color quickly!). 8. After removing and tossing, broil for a further minute or two, or until golden brown and crisp on the other side. Warm up and serve.
