The Freshman Cook: Refrigerator Soup

If you like soup, you will love this refrigerator soup! Why? Because it is a wonderful, tasty, aromatic treat for your senses, and it cleans out your fridge at the same time! What could be better?!
Here is how it’s done~ Go through your refrigerator and take out the left overs from your meals for the last few days. I found the following:

2 Chicken Legs- pull the meat off

2 Chicken Thighs-pull the meat off

1 Chicken Wing-pull the meat off

1/2 an Onion-give it a rough chop

some Broccoli-cut in to small florets

2 defrosted Cod Filets-put in whole, they will fall into small pieces

8 ounces of Pork Loin-chop into small bite size pieces

4 ounces of Corn Kernels

Then I used 2 boxes of Swanson Chicken Broth I had in the pantry along with a 1/2 bag of Ronzoni Healthy Harvest 100% Whole Grain Extra Wide Noodles. I put all of the above list in a pot, added the broth and noodles and put it on the stove. I added some garlic powder and pepper and let it simmer for 30 minutes, then turned the heat to low and let all the flavors kind of co mingle for another 30 minutes.
 The result was soup nirvana.

Of course, I love all the flavors! It was all ingredients I already had and had already used.

So, I ended up with no wasted food, and one of the best soups ever.

An added bonus? A clean refrigerator!

Enjoy!
