The Freshman Cook: Southwest 'Po Boy

What’s a Southwest ‘Po Boy, you ask? Well, it is a sandwich created to satisfy all my cravings for a ‘Po Boy. I keep seeing them advertised, and they look amazing! You see, I am a shrimp lover, but only cold shrimp, so a fried shrimp sandwich is not for me. Therefore, I came up with my Southwest ‘Po Boy sandwich. It is stuffed full of pan fried chicken, deep fried onion straws, chipotle sauce, avocados, and sour cream, and a little more.I used a wheat hoagie roll that is definitely not ‘Po Boy, but it tastes good!

1 medium Onion 1 cup Flour 1/2 teaspoon Morton Salt Substitute 1/2 teaspoon Garlic Powder 1/4 – 1/2 teaspoon Spanish Smoked Sweet Paprika 1 teaspoon Mrs. Dash Salt Free Fiesta Lime 1/2-1 cup Milk Can of Chipotle Peppers in Adobo Sauce 1/4 cup Sour Cream 1/4 cup Nonfat Yogurt 2 ounces Cream Cheese-softened Chicken Breast House of Autry Chicken Breader  Wheat Sub Roll Lettuce Tomato 1/2 of an Avocado 2 scoops Sour Cream Slice your onion very thin. I used a mandolin, but you can use a knife also. Soak your onion in the milk. Start with 1/2 cup of milk  and add more as needed. Start heating vegetable oil in a deep pot. You should get the

 temperature to 350 degrees.

While your onions are soaking, make your chipotle sauce by putting two chipotle peppers in a food processor. Add your sour cream, and non fat yogurt. Blend well. Take sauce out of food processor, and stir in softened cream cheese by hand. Place in fridge. I used House Autry Chicken Breader, which I know is not available everywhere, but any kind will work, or you can make your own with flour, pepper, cayenne pepper, salt, garlic, basil, oregano, and paprika. Place the chicken breader in a zip lock bag. Wet chicken sticks better, so get it wet if it isn’t. Place your chicken in the bag and coat all the chicken with the mix. Fry your chicken pieces in vegetable oil at about 350 degrees. This will take 25-30 minutes. As chicken becomes cooked, place it on a paper towel lined plate. It will stay hot until you eat it.  While your chicken is frying, drain the onion rings from the milk, and place in the flour mixture. Dredge or drag, the rings through the mix to coat them. Place in oil and cook until golden brown. This happens quickly, 3-4 minutes. Drain on a paper towel lined plate.
Your chicken should be done by now. I used
small pieces because they are easier to eat on a sandwich.
Start building your sandwich. I placed the chipotle sauce on the top and the bottom of the bun. It seemed hot at first, but it wasn’t at all while eating it. I put my lettuce and tomato on next, followed by the chicken pieces, onion straws, then avocado slices and sour cream. There you have it~a Southwestern ‘Po Boy. Enjoy!
