This weeks appetizer is a Cheese Quesadilla!! You will love this. Once you make this quesadilla, you will realize how easy it is to make up your own combinations, and all of the sudden you are a recipe creator! Trust me~it’s easy. You know what you like in the way of good food combos. That’s what this is. I mean, everything tastes good in a tortilla!! You are gonna love this!!
This is what you need:
Flour tortillas
Roma Tomatoes
Yellow Onions
Cowboy Beans
(leftover from last week)
Kraft Mexican 4 Cheese w/a Touch of Philly
Sour Cream
Avocado
Cilantro
Dice your tomatoes. Dice your onions. We did this here at:

Heat butter in a pan.
Add onions and tomatoes. Saute.
Add the beans, and heat them. (Don’t spill them on the stove, like the slop I am!!) In another pan, melt a pat of butter. Put a tortilla in and let it start to brown. Put a handful of cheese on top of the tortilla. Let it start to melt. After it starts to melt, add the onions, tomatoes, and beans to the tortilla. Add some more cheese.
Top the tortilla with another tortilla.
Now it’s time to flip the tortilla. But, it’s no big deal. You need to put another pan on top of the pan with the tortilla in it. Once you are covering the pan with the tortilla in it, turn the pan upside down so that the tortilla is now upside down in the second pan. The butter will brown the bottom of the second tortilla. Put your quesadilla onto a cutting board. It should slide right out of your pan. Cut in into a many pieces as you want with a pizza cutter. Move the quesadilla onto a plate for serving.
Garnish your completed quesadilla with a dollop of sour cream, a slice of avocado, and a sprig of cilantro. Enjoy your quesadilla!!!! There are so many different ways to personalize your quesadilla. You can add different veggies, or maybe chicken, steak, or pork. You can vary the cheese to whatever is your favorite. I used a flour tortilla that is the low carb type, but you could use any kind of tortilla, even corn tortillas. Thanks for joining me today. Tomorrow we will be making the salad portion of our meal. It’s salad with a twist! I know you’ll like it. So stop by and see what we’re cooking.!!!
