– 3/4 lb bacon – 1 lb bite-sized pieces of cauliflower – 10 oz bite-sized pieces of broccoli – 1/2 cup lightly salted sunflower seeds – 1/2 small red onion diced – 4 oz cheddar cheese cut into small cubes – 1 cup mayonnaise – 1/4 cup red wine vinegar – 2 tablespoons sugar
1. In a food processor, pulse the cauliflower four or five times, then remove and leave aside. It ought to resemble chunkier cauliflower rice. But you don't want to chop it very fine. 2. Combine the chopped red onion, apple, cauliflower, and broccoli in a large mixing basin. Mix until thoroughly blended.
