- 1 pound  Large tails-off, deveined and, cooked shrimp
- 1 tbsp Avocado Oil
- 1/2 teaspoon Pepper
- 1/2 teaspoon Ancho Chilli Powder
- 1/2 teaspoon Salt
- 1/2 teaspoon Cumin
- 1/3 cup Almond Flour
Baja Shrimp Tacos Sauce
- 1 tbsp Apple Cider Vinegar
- 1/2 Lime juiced
- 1/2 teaspoon Salt
- 1/2 cup Whole Milk Plain Greek Yogurt
- 1 teaspoon Smoked Paprika
- 1/2 teaspoon Chipotle or Regular Chili powder
- 1 tbsp Honey
- 1/2 teaspoon Minced Garlic
Baja Shrimp Tacos Topping
- 1/4 cup Chopped Cilantro
- 1/2 cup Cotija Cheese
- 1/2 cup Matchstick Carrots
- 1 cup Shredded Green Cabbage
- 4 medium Whole Wheat Tortillas
- 1/4 cup Chopped Red Onion
- 3/4 cup Shredded Red Cabbage
Instructions
- Begin by prepping and patting the prawns dry.
- In a large mixing bowl, whisk together ancho chilli powder, cumin, salt, pepper, and almond flour. Coat the prawns equally with this mixture and put aside.
- Prepare the sauce by combining yoghurt, vinegar, lime juice, honey, smoked paprika, garlic, chilli powder, and salt. Set aside.
- Combine the green cabbage, red cabbage, and carrots for the slaw. Coat with approximately 3/4 of the prepared sauce and set aside.
- Heat avocado oil in a sauté pan or skillet over medium heat before adding the seasoned prawns. Cook for approximately 5-7 minutes, or until the coating begins to brown and the prawns are equally warmed.
- While the shrimp are cooking, heat the tortillas on a separate burner.
- Assemble the Baja Shrimp Tacos by layering each tortilla with slaw mixture, cooked shrimp, chopped red onion, cotija cheese, a drizzle of extra sauce, and chopped cilantro.
