– 1.5 pounds small potatoes – 2 teaspoon salt - divided. – 4 tablespoon butter – 1 tablespoon olive oil - optional – ½ teaspoon black pepper – 8 cloves garlic
1. To ensure that the potato pieces are all the same size, wash, clean, and cut larger potatoes in half or even quarters.
2. Add one tablespoon of salt and potatoes to a saucepan of water, then cover with one inch of water. When potatoes are fork-tender, reduce heat and simmer, after bringing to a boil. 3. After draining, add the potatoes back to the pot or mixing bowl.
4. Pour olive oil and melted butter onto the potatoes. 5. Add black pepper and kosher salt to taste. 6. Add some freshly chopped parsley as a garnish and toss to mix. Cover and refrigerate until serving time.
