– 4 Lightly toasted and buttered burger buns – 1 lb Ground chunk – 4 Slices cheese – Kosher salt and freshly ground black pepper
1. Set your oven to broil (high) and position the oven rack in the upper-middle slot. 2. Line a cast iron grill pan or baking sheet with aluminum foil. 3. Divide 1 pound of ground chuck into four 4-ounce portions.
4. Carefully shape each portion into loose balls, avoiding overworking the meat. 5. Flatten each ball on a flat surface to form a disc about ½-¾ inch thick.
6. Create a slight indentation around the edge of each patty to prevent it from puffing up during cooking. 7. Place the patties on the prepared pan. 8. Season both sides of the patties generously with kosher salt and freshly ground black pepper.
9. Broil the patties for 4 minutes, or until the tops are browned and starting to char. 10. Flip the patties and continue broiling for another 3-4 minutes, until the internal temperature reaches 155°F.
11. If desired, place a slice of your favorite cheese on each patty and broil until the cheese is melted. 12. Move the patties to a cooling rack and tent them with foil, letting temperature rise to 160°F. 13. Serve the burgers on toasted buns with your preferred condiments.
