SENSATION CHEESY MASHED POTATO PANCAKES RECIPE

– 2 cups mashed potatoes about 4 medium-sized potatoes – 1 cup shredded sharp cheddar cheese – 1/4 cup all-purpose flour – 2 large eggs – 2 tablespoons chopped fresh chives or green onions – 1/2 teaspoon garlic powder – 1/2 teaspoon onion powder – Salt and pepper to taste – Cooking spray or oil for frying
1. In a large mixing bowl, combine the mashed potatoes, shredded cheddar cheese, all-purpose flour, eggs, chopped chives or green onions (if using), garlic powder, onion powder, salt, and pepper. Mix until well combined.
2. Heat a skillet or frying pan over medium heat and spray with cooking spray or add a small amount of oil. 3. Scoop about 1/4 cup of the potato mixture and drop it onto the hot skillet, then gently flatten it with a spatula to form a pancake shape. Repeat with the remaining potato mixture, leaving some space between each pancake in the skillet.
4. Cook the potato pancakes for about 3-4 minutes on each side, or until they are golden brown and crispy on the outside. Use a spatula to carefully flip them halfway through cooking..
