– ¼ tsp Salt – 1 ½ cups Short grain brown rice – ½ tsp Garlic powder – 1 cup Shredded cheddar cheese – 2 cups Finely chopped cauliflower rice – 2 tbsp Butter
1. Place 5 cups of water in a large pot and heat over medium until it simmers. 2. Add the rice and cook for about 20 minutes, or until it is mostly tender, partially covering the pot to let some steam escape. 3. It's fine if some water remains at the end of this step.
4. Next, add your chosen vegetable, cover, and continue cooking for another 6 minutes until everything is tender. 6. If the rice and vegetables aren't tender by the end of the cooking time but the liquid has been absorbed, add an additional ½ to 1 cup of water and continue cooking.
6. Turn off the heat and add butter, salt, garlic powder, and cheese. 7. Let it sit for a few minutes to allow the flavors to meld, then serve warm.
