– 1 tsp Baking soda – 1 cup Coconut flakes – 2 cups All-purpose flour – 2 tsp Vanilla extract – 1 cup Butter, softened – 1 Egg – 2/3 cup White sugar – 2/3 cup Lightly packed brown sugar
1. Toast coconut flakes and pecans in a skillet over medium-low heat until lightly browned, about 3 minutes. 2. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
3. Cream together butter, brown sugar, and white sugar until light and fluffy using an electric mixer. 4. Add egg and vanilla extract, and mix until combined. 5. Combine flour and baking soda, then add to the butter mixture and mix until just combined.
6. Stir in toasted pecans and coconut. 7. Scoop 1 1/2-tablespoon portions of dough onto the prepared baking sheet.
8. Bake for 10-12 minutes until lightly browned. 9. Cool on the baking sheet for 5 minutes, then transfer to a cooling rack.
