1. Begin by placing the eggs in a saucepan and covering them with cold water. Bring the water to a boil and let the eggs cook for 10-12 minutes. Transfer them to a bowl of ice water to cool quickly. 2. Once cooled, carefully peel and halve the eggs. Remove the yolks and mash them until smooth in a mixing bowl.
3. Season the mashed yolks with mayonnaise, Dijon mustard, salt, and pepper. Mix until smooth and adjust seasoning to taste. 4. Fill each egg white half with the yolk mixture using a spoon or piping bag.
5. Optional: Sprinkle paprika over the filled eggs for decoration and garnish with chopped fresh herbs. 6. Arrange the dressed eggs on a serving platter and serve immediately or refrigerate until ready to serve.
