– 2 Cloves garlic, pricked with a fork – ½ cup Bacon drippings – ½ lb Bacon strips – 1 Whole chipotle pepper – ¼ lb Chorizo sausage, crumbled – 1 Large onion, finely chopped – 5 Cans pinto beans, rinsed and drained – ½ lb Cooked ham, diced
1. Cook bacon strips in a large skillet over medium heat until crispy. 2. Remove the bacon with a slotted spoon and place on paper towels. 3. Save 1/2 cup of the bacon drippings.
4. Transfer the drippings to a large pot and heat over medium. 5. Sauté onions until lightly browned, then add ham and chorizo. 6. Set aside 1 cup of beans, adding the rest to the pot along with the chipotle and garlic.
7. Mash the reserved beans and add them to the pot. 8. Simmer the mixture until it thickens to a soupy consistency, about 30 minutes. 9. If it gets too dry, add water. Remove the chipotle and garlic before serving.
