– 1 pound 450g pork sausages – 1 package 2 sheets puff pastry, thawed – 1 egg beaten (for egg wash) – 1 tablespoon olive oil for brushing
1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. 2. Remove the sausage meat from the casings and shape it into 4 long sausages, about the length of the puff pastry sheets.
3. Roll out one sheet of puff pastry on a lightly floured surface. Cut it in half lengthwise to make two long strips. 4. Place a sausage in the center of each strip. Fold the pastry over the sausage and press the edges to seal. Repeat with the remaining sausage and pastry sheet.
5. Place the rolls seam side down on the prepared baking sheet. Brush the tops with beaten egg and use a sharp knife to make diagonal slashes on top. 6. Bake in the preheated oven for 25-30 minutes, or until the pastry is puffed and golden brown.
7. Remove from the oven and let cool for a few minutes before serving. Optionally, brush with a little olive oil for added shine and flavor. 8. Serve warm as a snack or appetizer, with mustard or your favorite dipping sauce. Enjoy your delicious Irish Sausage Rolls!
