DRESSING – ¼ cup Parmesan or grated pecorino romano – ⅓ cup Extra-virgin olive oil – 2 tsp Dijon mustard – ½ tsp Salt and pepper – ¼ cup Red wine vinegar
SALAD – 1 Can garbanzo beans, rinsed and well-drained – 1 Head iceberg lettuce – 1 cup Shredded mozzarella cheese – ¼ lb Italian salami
1. In a large serving bowl, mix oil, vinegar, mustard, salt, and pepper. 2. Whisk until the mixture is well combined. 3. Add the lettuces, salami, mozzarella, and garbanzo beans to the bowl.
4. Toss everything with the vinaigrette until evenly coated. 5. For the finishing touch, add more pecorino and adjust salt and black pepper to taste, if desired.
