– 1 Jalapeno pepper, sliced – 3 cups Vegetable stock – 1 Zucchini, halved and cut into 1/2-inch slices – 3 cup Water – 4 Green onions, chopped – 2 Cloves garlic, coarsely chopped – ½ Package firm tofu, drained and cube – 2 tbsp Korean soy bean paste
1. In a saucepan over high heat, bring vegetable stock and water to a boil. 2. Add garlic and soybean paste, stirring until the paste is fully dissolved.
3. Add tofu, green onion, zucchini, and jalapeño to the pot. 4. Bring the soup back to a boil, then lower the heat and let it simmer for 15 minutes.
