– 3 cups Mango - cubed, peeled and seeded – 1 ½ cup All-purpose flour – ¼ cup Unsalted butter, melted – ¼ cup White sugar – ¼ cup Heavy whipping cream – 2 tsp Baking powder – 1 pinch Salt – 3 Eggs
1. Preheat your oven to 350°F (175°C). 2. Prepare a 12-cup muffin tin by greasing it or lining it with paper liners. 3. In a bowl, mix together the flour, sugar, baking powder, and salt.
4. In a separate large bowl, beat the eggs, cream, and butter until smooth. 5. Gradually stir the dry ingredients into the wet ingredients until the batter is just moistened.
6. Gently fold in the mango pieces. 7. Divide the batter evenly among the muffin cups. 8. Bake for approximately 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
