– 8 slices of bread whole wheat – 2 cups sliced mushrooms – 1 tablespoon olive oil or butter – Salt and pepper to taste – 1 cup shredded cheese – 1/4 cup finely chopped onion – 1 clove garlic minced – 1 tablespoon chopped fresh herbs
1. Heat olive oil or butter in a skillet over medium heat. Add the sliced mushrooms and sauté for 5-7 minutes, or until they are tender and golden brown. Season with salt and pepper to taste. If using, add chopped onion and minced garlic and cook until softened and fragrant.
2. While the mushrooms are cooking, preheat your toaster or toaster oven. Place the slices of bread in the toaster and toast until golden brown and crispy. 3. Once the mushrooms are cooked and the bread is toasted, it’s time to assemble the sandwiches. Divide the sautéed mushrooms evenly among four slices of toasted bread.
