– 1/2 cup Unsalted butter softened – 2 tsp Vanilla extract – 1/3 cup Mashed potatoes – Creamy peanut butter for filling – 6 cup Powder sugar – 1 pinch Salt
1. Boil, drain, and mash potatoes until tender. Let cool completely. 2. In a large bowl, mix mashed potatoes, butter, vanilla, salt, and 1 cup powdered sugar with a hand mixer.
3. Gradually add remaining sugar until dough is firm enough to roll into a ball. 4. Refrigerate dough for 1 hour. 5. Divide into two pieces, refrigerate one.
6. Roll out remaining dough on powdered sugar-dusted surface into 1/4 thick rectangle. 7. Spread peanut butter, leaving edges clear. 8. Roll tightly into log, slice into 1/2 pieces.
