2.5 pounds boneless skinless chicken thighs 4 tablespoon olive oil divided 1/2 medium lime juiced 2 chilies from a can of Chipotle chilies rinsed and chopped 1 teaspoon chili sauce from a can of Chipotle chilies 4 cloves garlic minced 1 tablespoon chili powder 2 teaspoons cumin 1 teaspoon Italian seasoning 1 teaspoon salt 1/2 teaspoon pepper
1. In a large bowl, mix together the chicken, garlic, olive oil, adobo sauce, and seasoning, cover with plastic wrap. Chill for a minimum of two days or thirty minutes. 2. Add the marinated chicken to a big pan and cook it over medium-high heat in a skillet with a tablespoon of olive oil.
3. Cook, stirring occasionally, for 6 to 7 minutes on each side, or until thoroughly cooked and beautifully blackened. 4. After taking the chicken out of the skillet, let it rest for ten minutes on a cutting board. 5. Serve the chicken over a bed of lettuce or in a burrito bowl after slicing it into strips or cubes.
