– 1 Blender – 1 Chopping-board – 1 Knife
– 1 cup ripe apricots pitted and chopped – 1 cup mixed berries such as strawberries, raspberries, and blueberries – 2 tablespoons honey or maple syrup – 1 tablespoon lemon juice – 2 cups sparkling water or soda water chilled
1. In a blender, combine the chopped apricots, mixed berries, honey or maple syrup, and lemon juice. Blend until smooth. 2. Strain the fruit mixture through a fine-mesh sieve into a pitcher to remove any seeds or pulp. 3. Fill serving glasses with ice cubes.
4. Pour the strained fruit mixture evenly into the glasses, filling each glass about halfway. 5. Top each glass with chilled sparkling water or soda water, stirring gently to combine. 6. Garnish with fresh mint leaves, if desired. 7. Serve immediately!
