-1/2 ripe avocado -1 tsp lemon zest -2 tsp lemon juice -1/2 tsp kosher salt -1 5 oz can tuna -2 tbsp fresh cilantro or parsley -1 tbsp extra virgin olive oil -1/4 cup minced red onion -1/2 cup minced celery -Freshly ground black pepper
1. Place all the ingredients in a medium bowl. 2. Using a fork, mix thoroughly, mashing the avocado and breaking up the tuna chunks until well combined. 3. Adjust with additional oil, salt, and pepper if needed. Serve on your favorite sandwich bread or toast.
