– 2 medium zucchinis diced – 2 cloves garlic minced – 1 tablespoon olive oil – 1/4 cup Greek yogurt – 2 tablespoons lemon juice – 2 tablespoons tahini – Salt and pepper to taste – Optional: fresh herbs such as parsley or dill for garnish
1. Heat olive oil in a skillet over medium heat. Add minced garlic and diced zucchini. Cook until the zucchini is tender, about 5-7 minutes. 2. Transfer the cooked zucchini and garlic to a food processor.
3. Add Greek yogurt, lemon juice, tahini, salt, and pepper to the food processor. 4. Blend until smooth and creamy, scraping down the sides as needed. 5. Taste and adjust seasoning if necessary.
6. Transfer the dip to a serving bowl and garnish with fresh herbs if desired. 7. Serve with your favorite vegetables, crackers, or bread for dipping. Enjoy!
