- 1/3 cup granulated sugar
- 1/2 teaspoon cinnamon
- 2 tablespoons cornstarch
- 2 teaspoons water
- 1/2 cup dark brown sugar
- 1/2 teaspoon cinnamon

- 1/3 cup butter room temperature
- 3/4 cup granulated sugar
- 1/2 cup applesauce
- 1 teaspoon vanilla
- 2 eggs
- 2 1/4 cups flour
- 1 teaspoons baking powder
- 1 teaspoons baking soda
- 1/2 teaspoon kosher salt
- 1 teaspoon cinnamon
- 1 cup Greek yogurt or sour cream

Prepare the Filling:
In a saucepan, cook apples, granulated sugar, cinnamon, cornstarch, and water over medium heat for 5–6 minutes until softened and thickened. Cool. Mix brown sugar and cinnamon in a small bowl; set aside.
Make the Batter:
Cream butter and sugar in a stand mixer for 3 minutes. Add applesauce, vanilla, and eggs; mix until combined. In a separate bowl, whisk flour, baking powder, baking soda, salt, and cinnamon. Alternately add dry ingredients and Greek yogurt, beginning and ending with dry. Mix until just combined.
