BBQ Jackfruit Sandwich Recipe

- 1 14 ounce can jackfruit in brine 7.9 ounce or 224g drained weight
- 8 ounces super firm tofu* or sub 1 more can jackfruit
- 3 tablespoons avocado oil
- 1/2 red onion thinly sliced
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon kosher salt plus more to taste
- 3/4 cup barbecue sauce divided
- 1/2 cup water
- 8 burger buns
- Pineapple Coleslaw or tri-color slaw
Drain and rinse jackfruit, shred using fingers, and remove any seeds or firm pieces. Grate tofu using a box grater. Combine jackfruit and tofu.
Heat oil in a large pan over medium-high heat. Add onions and cook until translucent, about 3-5 minutes.
Add jackfruit-tofu mixture, paprika, garlic powder, and salt. Sauté for 3-5 minutes.
Stir in ½ cup barbecue sauce and water. Simmer on medium-low heat for 7-10 minutes until thickened.
Remove from heat, stir in remaining BBQ sauce, and serve on toasted buns with slaw.
