BBQ Jackfruit Sandwich Recipe

Ingredients
  

  • 1 14 ounce can jackfruit in brine 7.9 ounce or 224g drained weight
  • 8 ounces super firm tofu* or sub 1 more can jackfruit
  • 3 tablespoons avocado oil
  • 1/2 red onion thinly sliced
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon kosher salt plus more to taste
  • 3/4 cup barbecue sauce divided
  • 1/2 cup water
  • 8 burger buns
  • Pineapple Coleslaw or tri-color slaw

Instructions
 

  • Drain and rinse jackfruit, shred using fingers, and remove any seeds or firm pieces. Grate tofu using a box grater. Combine jackfruit and tofu.

  • Heat oil in a large pan over medium-high heat. Add onions and cook until translucent, about 3-5 minutes.

  • Add jackfruit-tofu mixture, paprika, garlic powder, and salt. Sauté for 3-5 minutes.

  • Stir in ½ cup barbecue sauce and water. Simmer on medium-low heat for 7-10 minutes until thickened.
