Ingredients
  

  • 10 cups vegetable broth
  • 6 carrots, roughly chopped and peeled
  • 2 bay leaves
  • 1 large red onion, roughly chopped and peeled
  • 3 celery stalks
  • 1 large potato, peeled and roughly chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp finely chopped ginger
  • 3 finely chopped garlic cloves

Instructions
 

  • In a large pot over high heat, heat the extra-virgin olive oil and sauté the garlic, ginger, and red onion for 5 minutes.
  • Add the carrots, celery, and potatoes, and continue cooking for another 5 minutes.
  • Pour in enough broth to cover the vegetables by about half an inch.
  • Add the bay leaves, bring the mixture to a boil, and simmer for 40 minutes.
  • Remove the bay leaves.
  • Remove the bay leaves. Use an immersion blender to blend about half of the soup.
  • If using a regular blender, blend the soup briefly to leave small chunks.
