- 10 cups vegetable broth
- 6 carrots, roughly chopped and peeled
- 2 bay leaves
- 1 large red onion, roughly chopped and peeled
- 3 celery stalks
- 1 large potato, peeled and roughly chopped
- 2 tbsp extra virgin olive oil
- 1 tbsp finely chopped ginger
- 3 finely chopped garlic cloves
In a large pot over high heat, heat the extra-virgin olive oil and sauté the garlic, ginger, and red onion for 5 minutes.
Add the carrots, celery, and potatoes, and continue cooking for another 5 minutes.
Pour in enough broth to cover the vegetables by about half an inch.
Add the bay leaves, bring the mixture to a boil, and simmer for 40 minutes.
Remove the bay leaves.
Remove the bay leaves. Use an immersion blender to blend about half of the soup.
If using a regular blender, blend the soup briefly to leave small chunks.
