- small handful coriander, leaves picked
- 1 tbsp vegetable or sunflower oil
- 1 green chilli
- 2 eggs
- ½ lime, juiced
- 2 small naan bread
- 1 avocado, halved and sliced
- 4 tbsp low-fat cream cheese
- 2 tbsp mango chutney
Preheat your oven to 200°C (180°C fan) or gas mark 6.
In a pan, heat the oil and cook the eggs until fried.
As the eggs cook, place the naan bread in the oven to warm.
Once the naan is heated, spread a layer of cream cheese on each one and drizzle with chutney.
Place a fried egg on top of each naan, then add slices of avocado, a squeeze of lime juice, a sprinkle of chili, and fresh coriander.
