Ingredients
  

  • 4 Large Eggs
  • ¼ Cup Milk
  • Salt And Pepper To Taste
  • 1 Cup Shredded Cheese Cheddar, Mozzarella, Or Your Choice
  • 4 Whole Wheat Tortillas
  • ½ Cup Cooked Bacon Chopped (optional)
  • ½ Cup Spinach Chopped (optional)
  • 2 Tbsp Olive Oil

Instructions
 

  • Prepare The Filling: In a bowl, whisk together the eggs, milk, salt, and pepper. Heat olive oil in a skillet over medium heat. Pour in the egg mixture and scramble until cooked through. Remove from heat and stir in cheese, bacon, and spinach if using.

  • Assemble The Roll-Ups: Lay a tortilla flat on a clean surface. Spoon some of the egg mixture onto the center of the tortilla. Roll it up tightly, starting from one edge and tucking in the sides as you go.
  • Toast The Roll-Ups: Return the skillet to medium heat. Place the rolled tortillas seam-side down in the skillet and cook for 2-3 minutes on each side until golden brown and crispy.
