Ingredients
  

Sweet Potatoes:

  • 2 medium Sweet potatoes
  • 2 tsp Olive oil divided
  • 1 tsp Paprika
  • ½ tsp Garlic powder
  • ¼ tsp Salt

Chicken:

  • 2 small Cooked boneless skinless chicken breasts shredded
  • ¼ cup Frank's Red Hot Sauce

Yogurt Sauce:

  • ¼ cup plain Nonfat Greek yogurt
  • 1 tbsp Nonfat milk
  • 2 tbsp ½ ounce crumbled Blue cheese
  • Pinch of salt

Instructions
 

Cook the Sweet Potatoes:

  • Pierce the sweet potatoes all over with a fork.
  • Cook in the microwave on HIGH for about 4 minutes per side, until tender.
  • Let the potatoes cool until they can be handled safely.

Prepare the Potato Filling:

  • Cut the potatoes in half lengthwise and scoop out the flesh into a medium-sized bowl. Reserve the skins.
  • Mash the potato flesh with a fork until smooth, then stir in 1 teaspoon of olive oil.

Season the Potato Filling:

  • In a small bowl, mix together paprika, garlic powder, and salt.
  • Stir half of the spice mixture into the mashed sweet potato.
  • Divide the mashed sweet potato evenly between the reserved potato skins.

Prepare the Chicken:

  • In a medium bowl, toss the shredded chicken with the remaining 1 teaspoon of olive oil and the remaining spice mixture.
  • Stir in the hot sauce until the chicken is well coated.
  • Divide the chicken mixture evenly among the stuffed sweet potatoes.
  • In a small bowl, mix together Greek yogurt, milk, blue cheese, and a pinch of salt.
  • Top each stuffed sweet potato with a dollop of the yogurt sauce.
