Ingredients
  

  • 12 Large eggs
  • 1 tbsp minced Shallot
  • 1 tbsp Grainy mustard
  • 1 cup Mayonnaise
  • 1 tsp Hot sauce add more for extra heat
  • ½ tsp Cajun seasoning
  • 1 tsp Apple cider vinegar
  • ¼ tsp Paprika
  • Salt and ground black pepper to taste
  • Green onions for garnish optional

Instructions
 

  • Place the eggs in a medium pot and cover with at least 1 inch of cold water. Bring to a boil over high heat. Once boiling, turn off the heat, cover the pot, and let the eggs sit for 14 minutes.
  • Transfer the boiled eggs to an ice bath to cool completely. Once cooled, peel the eggs and slice them in half lengthwise. Remove the yolks and place them in a medium-sized bowl. Mash the yolks with a fork until smooth.
  • To the mashed yolks, add minced shallot, grainy mustard, mayonnaise, hot sauce, Cajun seasoning, apple cider vinegar, paprika, salt, and pepper. Mix well until everything is thoroughly combined.
  • Spoon or pipe the yolk mixture evenly into the egg white halves. For an extra touch, garnish with sliced green onions if desired.
