Ingredients
  

  • ¼ tsp Salt
  • 1 ½ cups Short grain brown rice
  • ½ tsp Garlic powder
  • 1 cup Shredded cheddar cheese
  • 2 cups Finely chopped cauliflower rice
  • 2 tbsp Butter

Instructions
 

  • Place 5 cups of water in a large pot and heat over medium until it simmers.
  • Add the rice and cook for about 20 minutes, or until it is mostly tender, partially covering the pot to let some steam escape.
  • It's fine if some water remains at the end of this step.
  • Next, add your chosen vegetable, cover, and continue cooking for another 6 minutes until everything is tender.
  • If the rice and vegetables aren't tender by the end of the cooking time but the liquid has been absorbed, add an additional ½ to 1 cup of water and continue cooking.
  • Turn off the heat and add butter, salt, garlic powder, and cheese.
  • Let it sit for a few minutes to allow the flavors to meld, then serve warm.
