These Chicken Parmesan Sandwiches are a delightful main course inspired by Italian-American cuisine. They feature crispy breaded chicken, marinara sauce, melted mozzarella, and pesto, all served on buttery garlic bread. This recipe is easy to make and perfect for serving family and friends.

Ingredients
  

For the Chicken:

  • 2 tbsp Olive oil
  • 2 tbsp Unsalted butter
  • 2 Chicken breasts butterflied
  • Seasoned croutons crushed (for breading)
  • Pesto store-bought or homemade
  • Jarred marinara sauce
  • 8 ounces mozzarella cheese sliced
  • Parmesan cheese for sprinkling

For the Sandwich:

  • 4 Hoagie rolls or French baguettes
  • 1 stick Unsalted butter softened
  • Garlic salt with herbs Johnny's Garlic Spread from Costco is a great option

Instructions
 

Cook the Chicken:

  • Heat 2 tablespoons of olive oil and 2 tablespoons of butter in a large pan over medium-high heat.
  • Dredge each chicken breast in crushed croutons, coating both sides.
  • Cook 2 chicken breasts at a time in the pan. After a minute, reduce the heat to medium-low. Cook for 5 minutes, flip, and cook for another 5-7 minutes or until the chicken reaches 160°F. Remove from the pan, add more butter and oil if needed, and repeat with the remaining chicken. Set aside.

Prepare the Bread:

  • Butter the insides of the hoagie rolls or baguettes and sprinkle with garlic salt.
  • Broil the bread open-faced in the oven until golden brown. Set aside.

Assemble the Sandwiches:

  • Spread a spoonful of marinara sauce on the bottom half of each roll.
  • Place the cooked chicken on top of the sauce.
  • Cover the chicken with additional marinara sauce and top with mozzarella slices.
  • Broil the sandwiches until the cheese is bubbly and melted.
  • Sprinkle with Parmesan cheese and add a smear of pesto for extra flavor.
  • Top with the other half of the bread and enjoy!

Notes

  • You can prepare the pesto a day in advance to save time.
  • For a quicker option, use jarred marinara sauce or try a rich homemade bolognese.
