Ingredients
  

  • a small handful of chopped cilantro
  • 1 tsp salt
  • 2 tsp toasted sesame seeds
  • tsp sugar
  • 2 tsp chili oil
  • 2 tsp sesame oil
  • 3 cloves garlic
  • tbsp rice vinegar
  • 3 tsp light soy sauce

Instructions
 

  • Rinse the cucumbers and pat them dry with a clean towel.
  • To prepare the dressing, combine salt, sugar, sesame oil, light soy sauce, and rice vinegar, stirring until the salt and sugar dissolve completely.
  • Set aside.
  • Place a cucumber on a cutting board and gently press down with a large knife to crack it into sections.
  • Continue this process along the entire cucumber until it's broken into four long pieces.
  • Slice each piece at a 45-degree angle into bite-sized chunks.
  • In a large bowl, combine the cucumber pieces with the dressing, garlic, and chili oil.
  • Toss everything thoroughly to coat.
  • Garnish with sesame seeds and cilantro before serving.
