- a small handful of chopped cilantro
- 1 tsp salt
- 2 tsp toasted sesame seeds
- 2½ tsp sugar
- 2 tsp chili oil
- 2 tsp sesame oil
- 3 cloves garlic
- 1½ tbsp rice vinegar
- 3 tsp light soy sauce
Rinse the cucumbers and pat them dry with a clean towel.
To prepare the dressing, combine salt, sugar, sesame oil, light soy sauce, and rice vinegar, stirring until the salt and sugar dissolve completely.
Set aside.
Place a cucumber on a cutting board and gently press down with a large knife to crack it into sections.
Continue this process along the entire cucumber until it's broken into four long pieces.
Slice each piece at a 45-degree angle into bite-sized chunks.
In a large bowl, combine the cucumber pieces with the dressing, garlic, and chili oil.
Toss everything thoroughly to coat.
