- 2/3 cup Almond butter or any smooth nut butter
- 2 tbsp Avocado oil or melted butter
- 1/4 cup Liquid allulose or 1/4 cup powdered sweetener + a little water
- 1 tsp Vanilla extract
- 3/4 cup Chocolate whey protein powder
- 1/4 cup Nut flour pecan, walnut, or almond
- 2 tbsp Cocoa powder
- 1/8 tsp Salt if nut butter is unsalted
- 2 tbsp Mini keto chocolate chips
- 2 tbsp finely chopped Walnuts or pecans optional
In a large bowl, mix almond butter and oil until smooth. Add liquid allulose and vanilla extract, stirring until well combined.
Mix in protein powder, nut flour, cocoa powder, and salt until dough forms. If needed, adjust consistency with more oil or flour.
Stir in chocolate chips and nuts until evenly distributed.
Roll into 1-inch balls and refrigerate until firm. This recipe makes about 20 balls.
-
For sweeteners: Liquid allulose helps bind the balls together. If using powdered sweetener, add water to help the dough stick.
-
Adjusting consistency: Depending on your nut butter and protein powder, the dough may vary. Add more oil if too stiff; add more flour if too sticky.
