Ingredients
  

  • 1 ¾ cups White or yellow cornmeal
  • ¼ cup Flour
  • 1 tbsp Paprika
  • 2 tsp Salt
  • 2 tsp Lemon pepper
  • ½ tsp Cayenne pepper

Instructions
 

  • Combine all ingredients in a plastic bowl with a lid or in a brown paper lunch bag.
  • Shake vigorously to mix everything together.
  • Drop cleaned fish fillets into the bowl or bag with the cornmeal mix.
  • Shake vigorously again to coat the fish evenly.
  • Heat canola or peanut oil to 375°F (190°C) in a deep fryer.
  • Fry the fish for 5-7 minutes until golden brown.

Notes

  • For extra flavor, you can add ½ teaspoon of garlic powder and ½ teaspoon of onion powder to your cornmeal mix.
  • To reheat leftovers, preheat your oven to 350°F (175°C). Place the leftover fish on a baking sheet and reheat in the oven for 10-15 minutes. Flip the fish over halfway through the reheating time to ensure even heating.
