These creamy cottage cheese bowls are full of protein and can be sweet or savory! Even if you're not a fan of cottage cheese, you might like these. Just chop your veggies and pistachios the night before and keep them in separate containers. Wait to cut the tomatoes until you're ready to eat to keep them fresh. You can even prep extra veggies to use for bowls later in the week.

Ingredients
  

  • 1 cup Cottage cheese
  • 1.5 tbsp chopped Dill
  • ¼ cup sliced English cucumber
  • ¼ cup sliced Radish
  • ¼ cup diced Red bell pepper
  • 1 tbsp Pumpkin seeds
  • 1 tbsp Hemp seeds optional
  • A little bit Salt
  • A little bit Black pepper optional

Instructions
 

  • Chop the dill finely and mix it with the cottage cheese in your bowl. If you like, add a pinch of salt and black pepper.
  • Cut the bell pepper, radish, and cucumber into small pieces. Put them on top of the cottage cheese.
  • Sprinkle pumpkin seeds and hemp seeds (if you have them) on top.

Notes

  •  If you want more or less dill flavor, adjust the amount you use.
  • For a smoother texture, you can blend the cottage cheese before mixing in the dill.
  • Using full-fat cottage cheese will make it tastier.
