Ingredients
  

  • 2 large ripe avocados
  • 1 cup sweet corn kernels
  • 1/4 cup red onion
  • 1 small jalapeno pepper
  • 2 tablespoons fresh cilantro
  • Juice of 1-2 limes
  • 1 clove garlic
  • Salt and pepper

Instructions
 

  • In a large mixing bowl, add the mashed avocados.
  • Add the cooked and cooled sweet corn kernels to the bowl.
  • Next, add the finely diced red onion, jalapeno pepper, and minced garlic.
  • Sprinkle the chopped fresh cilantro over the ingredients in the bowl.
  • Squeeze the lime juice over the mixture, starting with the juice of one lime, and add more to taste if needed.
  • Season the guacamole with salt and pepper to taste.
  • Optional: If using, gently fold in the diced cherry tomatoes and red bell pepper.
  • Using a fork or potato masher, mash and mix all the ingredients together until well combined and your desired consistency is reached. Some prefer their guacamole chunky, while others prefer it smoother.
  • Taste the guacamole and adjust the seasoning if needed, adding more salt, pepper, or lime juice as desired.
  • Once seasoned to your liking, transfer the guacamole to a serving bowl.
  • Garnish with additional cilantro leaves or a sprinkle of paprika, if desired.
  • Serve the Corn Guacamole immediately with tortilla chips or as a topping for tacos, burritos, or grilled meats.
