- 6 Mini Cucumbers or 1 long English cucumber
- ½ cup Red onion thinly sliced or diced
- 2 tbsp Olive oil
- 1 tbsp Red wine vinegar
- 1 tbsp Fresh Lemon juice
- 1 tbsp Fresh dill
- 1 tbsp Fresh parsley
- ¼ tsp Salt adjust to taste
- ⅛ tsp Black pepper
- 2 Ounces crumbled Feta cheese
Mix olive oil, vinegar, lemon juice, dill, parsley, salt, and pepper in a bowl.
Slice the cucumbers about ¼ inch thick. If you're using an English cucumber, cut it into quarters.
